In 1999, Mr. José Luis Espinoza Delgado set out in search of a property near San Antonio, Texas. He wanted fertile land — capable of producing pasture in abundance to sustain a herd of black and red Angus cattle — in a location that also held the promise of future commercial, industrial, or development potential, so that it might appreciate in value while operating as a farm for raising cattle and horses. At the time, his farm lay on the outskirts of Monterrey, Nuevo León, Mexico, in the municipality of Hualahuises, and he decided to move the operation to Texas for business reasons.
He searched carefully through the counties south of San Antonio, where the land — though beautiful and dotted with mature live oaks — struck him as too sandy. He also explored the north, in the Hill Country, whose beauty captivated him; but the terrain, rolling and wooded, proved rugged and too far from the roadways that would one day allow it to become commercial, industrial, or residential land. At last he found a parcel with a long frontage on Interstate IH-10, in Guadalupe County, east of San Antonio. Without hesitation, he contacted the owner and acquired it. Some five years later, he added the adjoining tract to the east, which likewise enjoyed valuable frontage on the IH-10.

American Legacy Farm has been breeding Thoroughbreds for thirty years. The great majority of these horses are sold at public auction to race under the colors of the owners who buy them. Even so, every year a few of them draw bids that fall short of their reserve price. Of those that go unsold, some are sent into training to be offered later as two-year-olds in training, while others go straight to the racetrack to run in the name of the farm or of its owner, José Luis Espinoza.
The Shift Toward Quality and Cattle
The breeding operation began here at American Legacy Farm with a band of ninety mares. Over the years that number was reduced to give priority to raising cattle. We also keep a sister farm in Versailles, Kentucky, where Thoroughbreds are bred in smaller numbers. Over time we have applied a strict filter, keeping only the best mares and breeding them to proven sires and to outstanding prospects — Kentucky Derby or Breeders' Cup champions — entering their first season at stud.

II The Science and Process of Thoroughbred Breeding

The Thoroughbred is renowned for speed, agility, and stamina, developed specifically for racing. Classified as a “hot-blooded” breed for its spirited temperament and lean structure, its status rests on a closed, strict registry: every living member must trace back to a select group of ancestors. The science of the breed synthesizes pedigree analysis, physical selection, and molecular genetics to produce the ultimate racing athlete.
The Foundational Lineage
The breed begins in 17th- and 18th-century England, where native mares were crossed with imported Oriental stallions to enhance speed and endurance. All modern Thoroughbreds trace their male line to three sires — the Darley Arabian, the Godolphin Arabian, and the Byerley Turk — brought from the Middle East and North Africa, whose offspring proved superior on English racecourses.
That program led James Weatherby to create the General Stud Book (GSB) in 1791, the breed’s first formal registry. Documenting only pedigrees traceable to the foundation stock, it closed the studbook to outside bloodlines. 1 The American Oak in Texas
In Texas, “American oak” takes in a whole family of natives, and this corner of the state grows several of them: the live oak (Quercus virginiana), which holds its leaves straight through winter and spreads a crown wider than it is tall; the post oak (Q. stellata), the toughest of the local upland oaks; and the Shumard red oak (Q. shumardii) and bur oak (Q. macrocarpa), which colour and drop their leaves each fall. They grow slowly but live for centuries, and once their roots are down they carry themselves through drought on their own. No other tree here casts shade so deep or so cool — which is exactly why we plant them, water them while they are young, and leave them standing.
2 The Crape Myrtle
The crape myrtle (Lagerstroemia indica) is not a Texas native — it came out of Asia — but few trees have ever taken to this climate so completely. It flowers when almost nothing else will: from early summer clear into fall, through the very worst of the heat, in white, pink, red, or lavender, and it keeps at it for a hundred days or more. It asks for full sun, shrugs off drought and poor soil once established, and each year sheds its bark in strips to reveal a smooth, mottled trunk underneath. It is a small tree, planted for colour and for shade close to the houses and the drives.
3 The Native Mesquite
The honey mesquite (Prosopis glandulosa) belongs to this land and is built for it. Its taproot drives far down after water, which is why it stays green through droughts that burn everything else brown, and — being a legume — it fixes nitrogen and feeds the soil it stands in. Its roots hold the ground against erosion, and its fine, open canopy filters the sun rather than blocking it, giving cattle shade without killing the grass underneath. Ranchers have fought it as brush for a hundred years, and on open pasture that fight is fair. But left standing in the right places, on our mixed pastures, it earns its keep — and it is a beautiful tree.

A cattle farm is never only a cattle farm. Long before the first post of our white fence went into the ground, this stretch of Guadalupe County belonged to the gray fox, the wild turkey, the white-tailed deer, the bobwhite and the hawk. They did not leave when we arrived. They are still here — and the way we see it, they are not trespassers on our land. We are the newcomers on theirs. Every decision we make about grass, water, brush and trees is also a decision about them, whether we intend it that way or not. We intend it.

1 A Working Farm Is Also a Habitat
There is an old idea that land must be either productive or wild, and that every acre given to one is taken from the other. Thirty years here have taught us the opposite. The practices that make a pasture good for cattle — deep-rooted native grass, standing water, shade, cover along the fence lines — are very nearly the same practices that make it good for everything else that lives on it. A pasture grazed to the dirt feeds nothing: not our cows, not the quail, not the soil. A pasture rested and allowed to recover feeds all three.
So our stewardship of wildlife is not a separate program with its own budget and its own signage. It is the ordinary consequence of running the farm the way we already believe it should be run: fewer animals, better managed; grass given time to come back; water kept clean and available; trees planted and watered until they can stand on their own; and native cover left standing where it does more good than harm.
2 The Gray Fox
The gray fox (Urocyon cinereoargenteus) is native to Texas and one of the most misunderstood animals on any farm. It is smaller than a coyote and far more secretive, moving mostly at dusk and through the night, denning in brush piles, hollow trunks and rock crevices. It is also the only canid in North America that regularly climbs trees — it has rotating forearms and semi-retractable claws, and will go up a mesquite or a live oak to escape a coyote or to reach fruit.
It earns its place here. A gray fox is an omnivore that lives largely on rodents, rabbits, insects, berries and mast, and a resident pair does more honest rodent control across a pasture than any product we could buy. It is not a threat to a grown cow, and a healthy Angus mother is more than a match for anything a fox might consider. We do not shoot them, trap them, or poison the ground they hunt on. We leave them the brush piles and the hollow trees they need, and they take care of the rest.
3 The Rio Grande Wild Turkey
The Rio Grande wild turkey (Meleagris gallopavo intermedia) is the subspecies of central and south Texas, and Texas holds the largest population of them anywhere. That is not an accident of geography — it is the result of a century of deliberate restoration, after unregulated hunting and habitat loss had brought the wild turkey to the edge of disappearing from this state entirely. Every flock that crosses a Texas pasture today is standing proof that stewardship works when people commit to it.
Turkeys are demanding tenants, and what they demand is exactly what we have spent thirty years building. They need mature trees to roost in at night, safe from coyotes — which is one more reason our oaks and our standing mesquites matter. They need nesting cover: tall grass and brushy edges left undisturbed through spring. They need brood habitat, because poults live almost entirely on insects for their first weeks and cannot find them in a pasture mowed to the ground. And they need water within reach of the roost. Give a Texas pasture those four things and the turkeys will find it on their own. We have tried to give them all four.
4 What This Looks Like in Practice
Rotational grazing. Grass rested and allowed to recover is cover for ground-nesting birds, seed for the doves and quail, and insects for turkey poults. The same rest that protects our soil protects them.
Controlled herd size. We keep fewer animals and manage them better. Land that is not pushed to its limit for our cattle has margin left over for everything else that lives on it.
Water, kept clean and available. Our ponds were dug to capture rainwater for the herd. They also water the deer, the fox, the turkeys and the birds — every day, and especially in a Texas August, when open water is the difference between staying and leaving.
Trees, planted and protected. The American oaks we have planted and irrigated for years are not only shade for cattle. Their acorns are food and their crowns are roosts. A tree planted today is habitat for fifty years.
Native brush, left where it belongs. The mesquite that we leave standing in the mixed pastures holds the soil and shades the herd — and it is also den, roost, cover and food. We clear brush where it must be cleared, and we leave it where leaving it does more good.
No poison, no needless killing. We do not poison rodents, and we do not kill predators for the sake of killing them. A farm that removes every fox and every hawk inherits the rodents they were eating.
Fence lines and field edges. The untidy strip along a fence is not neglect. It is cover, travel corridor and nesting ground, and it costs us nothing to let it be.
5 Where We Stand
We are honest about what we are. This is a working farm; our cattle and our horses come first, and we make no pretense otherwise. We are not a wildlife refuge and we do not claim to be. But we have never accepted that our work and this land’s wild life are in competition. In thirty years we have found them to be the same project seen from two sides — because a farm that exhausts its soil, drains its water and strips its cover will eventually fail its cattle just as surely as it failed the quail.
Our commitment is plain: to leave this land in better condition than we found it, with its native animals still on it. The gray fox in the grass and the turkeys crossing the pasture at dawn are not decoration. They are the clearest evidence we have that we are managing this place correctly — and if they ever stop coming, we will know something has gone wrong long before any balance sheet tells us.
